Description

Music buffs may recognize Bonache founder Marc Olsen from his 15-year music career providing vocals and guitar for the band Sage and performing as a solo artist, but his latest artistic endeavor is chile sauces. Named after a word invented by Olsen’s young son, Bonache is the culmination of Olsen’s lifetime passion for peppers. "My first clear memory of eating Hatch chiles is from the Owl Bar and Grill in San Antonio (NM)," Olsen recalls. "They served (still do!) their green chile burger as a mainstay of the menu, and I can remember downing those things as early as 4 or 5. They are about as good as it gets. My family would make the 8-mile trip especially for these burgers." It's no surprise that two of Olsen's three chile sauces were inspired by his birthplace - Hatch, so called for its main ingredient, and Socorro, named for the town where Olsen grew up. Olsen's been serving up batches of hot sauce to family and friends for years, but after sampling hot sauces from Belize and Panama he realized there was a market for a similar type of sauce back home and set about creating Bonache Habanero sauce. At first hand drawing the artwork and lettering for each individual label, his initial bottles of sauce found their way onto the tables of Ballard restaurant Hattie’s Hat where he was tending bar. The sauces were so well received he soon found the support to go into large scale production and before long Bonache could be found in of some of Seattle’s most unique restaurants and grocery stores. Inspired by the bright flavors found in the Belizian and Panamanian sauces he sampled, Olsen has created a line of balanced condiments that bring the heat but focus on flavor -- ideal for hot sauce aficionados who want to feel the burn without removing their taste buds in the process. Habanero, so titled for its main ingredient, is Olsen’s flagship sauce, but even Olsen’s spiciest offering, Socorro, maintains a manageable level of heat. “I had very little interest in creating a ' melt-your-face-off ' type of hot sauce," Olsen says. "The beauty and challenge of working in these more accessible styles of hot sauce really began to grab me.” The result? Three multifaceted condiments that augment the meals they're meant to complement. Flavor-focused yet satisfyingly spicy, Bonache sauce is made for pouring, not sprinkling. “I think the 'magic' in eating chilies occurs largely in the vastly enhanced and expanded flavor pallet that they can facilitate in the food," Olsen says. "Even the most basic types of food, like rice and beans, can be transformed entirely."
