We're a Texan/Sydney-sider couple finally realising a way to produce authentic Central Texas-style brisket barbecue for those missing out (but mostly for us). We will be popping up at Batch Brewing Company, Marrickville, every few weeks from now through the summer. LOW AND SLOW is our smoking method. Our very happy meat (http://www.featherandbone.com.au/aboutus.html) is smoked for a minimum of 12 hours at 120 degrees celsius. This transforms a once-tough cut of meat into a moist, flavourful and tender feed. * * Where do we source our ingredients from? * * As wannabe Inner-Westies, we have carefully sourced all of our ingredients from selected local, ethical businesses.
