Indian cuisine encompasses a wide variety of regional cuisines native to India. Given the range of diversity in soil type, climate and occupations, these cuisines vary significantly from each other and use locally available spices, herbs, meat, vegetables, and fruits. Indian food is also heavily influenced by religious and cultural choices. Bengali food refers to the regional food from both West Bengal (in India) and Bangladesh (formerly known as East Bengal). Bengal was partitioned after India’s independence in 1947, but our cultures and especially our food habits are very similar. Bengalis use a lot of leafy vegetables such as spinach or radish leaves which we call ‘shaak’. Where vegetables are usually only seasoned or tempered with mild spices, cooking meat or fish requires the use of stronger spices like ginger and garlic.
