Chef Mark Peel opened his new concept in downtown Los Angeles’ historic Grand Central Market this March. “Bombo,” is a name inspired by the steel-jacketed steam kettles he uses to prepare the dishes. The restaurant will feature the same seasonal, flavor-packed food Chef Peel is known for in quickly prepared dishes focused on seafood entrees. Bombo will also sell fresh seafood curated by Peel in a modern-day fish market. By limiting the menu and concentrating on just a few broth-based entrees and sides, Chef Peel can deliver items like Seared Spanish Mackerel and Curried Shrimp in 3-4 minutes at a reasonable price. There will be meat and vegetable based items as well. "I want to eliminate the trappings of fine dining and get right to the food,” said Peel. “I’ve developed four different broth bases that complement the dishes and I'm very excited to introduce diners to these steam kettles.” Most of the cooking will be done for all to see in kettles on the counter, enhancing the diners’ experience by providing a bit of culinary theatre and moving the preparation and cooking out from behind the scenes.
