The smell of ginger creates fond memories, and I for one consider it a "comfort" spice. Just the smell of ginger makes us feel better. Remember those Snickerdoodle Cookies, Christmas Spice Cakes, and of course those wonderful Gingerbread Pancakes! As we enter the beautiful days of fall, try our Gingerbread Pancake/Waffle recipe. Just remember, you're making memories with everyone you share it with! Gingerbread Pancakes/Waffles (organic ingredients are always best) 3 eggs 1/4 cup brown sugar 1/2 cup buttermilk 1/2 cup milk 1/4 cup brewed coffee 2 1/2 cups white flour OR whole wheat flour 1/2 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon ground cloves 1 tablespoon ground cinnamon 1 tablespoon ground ginger 1 tablespoon nutmeg 1/2 stick unsalted butter (melted please) Cream eggs and sugar together, then stir in buttermilk, milk, & coffee. In a separate bowl sift all dry ingredients. Stir egg mixture into dry ingredients and then mix in melted butter. You may add extra milk if needed. Cook on a lightly greased hot griddle or in a heavy skillet until done (when tiny bubbles appear on the upper side it is time to flip it!) OR just add to your waffle machine and experience waffles at their finest. I usually top with Bananas Foster, whipped cream, and walnuts, however, fresh fruit of any type will taste amazing on these pancakes. Enjoy your friends and the food you share! It is almost Thanksgiving, so it is time to share! Below are some of our favorite breakfast butters. Please give them a try and let us know how you like them. CRANBERRY BUTTER (can use strawberries) 1/2 cup of softened unsalted organic butter 3 tablespoons of organic cranberry jam OR 1/4 cup of mashed organic cooked cranberries 1/4 teaspoon of organic lemon juice Stir together - place in mold - chill - turn out on platter This is great on just about any roll, muffin, bread or toast! Decorate with grated cranberries & two organic mint leaves. Enjoy and hug someone you love! CINNAMON BUTTER 1/2 cup of softened unsalted organic butter 1 tablespoon of organic Agave Nectar 1/8 teaspoon organic ground cinnamon Stir together - place in mini-molds ( or ramekins if in a hurry) This is so delicious on waffles, pancakes, biscuits, or banana nut muffins! BASIL BUTTER 1/2 cup of softened unsalted organic butter 6 leaves of washed organic basil finely cut Stir together - place in tiny molds - chill These are great on homemade biscuits or butter scones!
