Chef Jay Hwang is committed to fusing all of his courses with traditional Korean ingredients, bringing out a palette of unique flavors. Not only do his courses tastefully blend tradition and innovation, but all of his dishes are also based on natural and organic ingredients, such as those found in kimchi, which is known for its anti-cancer attributes. Food was always a part of the Hwang family. Chef Hwang’s grandfather created a new style of miso paste and booked a flight to the U.S. for June 26th. Sadly, the Korean War began June 25th and North Korea captured his grandfather. Since then, his grandmother dedicated herself to teaching his grandfather’s innovative boiling technique in creating miso paste at one of the top schools in Korea, Yonsei University. Because cooking was in his blood, Chef Hwang was found in the kitchen since he was 10 years old, and became dedicated to sharing authentic Korean flavors within the U.S.
