Empellón's approach to cuisine is informed by authenticity but is not limited by it. Empellón Al Pastor: Many chefs often feel an immense pressure to innovate and interpret, so much so that sometimes discovering something simple and deliciously authentic feels fresh and new. For us, this happened with tacos al pastor. At Empellón Al Pastor, we have a finite focus on one of the most delicious ideas ever to adorn a tortilla. Pork shoulder steaks are rubbed with chile and roasted on a spit. We slice the meat thin and dress it with a green salsa followed by a red one, then add a sliver of pineapple with a bit of onion. Our tortillas are created in-house in a special area solely for this purpose. Nixtamalization--Mexico’s most important cooking technique--happens here every morning. In this process, field corn is boiled and ground into aromatic masa for our tortillas every day. By concentrating on this particular dish, we are trying to get one step closer to having all the puzzle pieces we need in place in order to make great Mexican cuisine here in NYC. Empellón Taqueria: We opened our doors on March 22nd, 2011 with the intention of treating tacos with a high level of respect and serving them in a fun environment, which is how we believe tacos should be enjoyed. We designed the menu with the idea that most ingredients worth eating can benefit further by being placed atop a well-made tortilla. We push our kitchen team to explore the ubiquitous flavors that we all love about Mexican cooking in this country as well as the less obvious ones that we all should love. Empellón Cocina: There is a fine line between taking a cuisine in a new direction and stripping it of its soul (and Mexican food has some serious soul). This is a belief that we keep in mind when contemplating the cuisine at Empellón Cocina. Garlic, ginger and scallions taste different coming from a wok then they do from a saute pan. Technique and application define a cuisine just as much as the ingredients. In fact, I would argue more so. And that is the philosophy of our kitchen in the East Village. At Empellón Cocina we are dedicated to the myriad of fundamental techniques and applications that make Mexican cooking taste Mexican. But we are dedicated to using them with our own sensibility.
