I started my culinary journey at the age of 16 in the kitchen of the Kitchener-Waterloo Hospital. Where food safety and clean working habits are rule #1; maybe not the best of Restaurant cuisine but a great place to start learning the basic rules of food handling. After attending George Brown College the call of the west took me to the Canadian Rocky Mountains; Chateau Lake Louise for a summer job that lasted 4 years as Head Baker, Chef Garde manger, skier and hiker. Toronto’s Royal York Hotel is where I was introduced to culinary competitions through the esteemed Escoffier Society (the Canadian Culinary Federation’s Toronto Branch). I was transferred to Bremen West Germany and apprenticed under 5 Master Chefs and lived to talk about it. Returning to the Sutton Place Hotel and continuing with competing in the realm of highly completive Chefs of Central Ontario, the winds of travel brought me to the Four Seasons Hotel in Nevis, U.S. Virgin Island. I continue to meeting and working with lifelong friends and representing Canada with the Epicurean World Master Chefs Society and traveling to Limerick Ireland and Dallas Texas, competing agents five countries in a black box cook off for a banquet of 100 people, nothing but foodies and international judges. My journey has more recently brought me the opportunity to teach private cooking classes and team building parties at the Everton Academy of Culinary Arts in Guelph. The pride of sharpening my chef knives with Canada’s best continues to this day. Which brings me to you and the opportunity to work with your concept, space and budget.
