Having suffered for years from undiagnosed digestive issues, skin conditions, chronic fatigue and an inability to focus properly, it was suggested to me that I should try eliminating Gluten from my diet and see if I reap any benefit from it. After trying this diet for 1 month, I noticed a massive difference, after 2 months all but one of my symptoms that I had suffered daily have now disappeared. I couldn’t believe it; I was amazed at how the removal of specific food types to your diet can affect your body within a relatively small time scale. As dramatic as it sounds, removing Gluten from my diet has completely changed my life for the better, I feel clear headed and full of energy. Since this revelation, I have propelled myself into a new chapter of learning about Gluten Intolerance and Celiac Disease. Out of necessity, I took on a mission, to be able to cook and bake tasty Gluten free food, that not only looks great, but tastes yummy and can stand up to the taste challenge alongside ‘normal’ food. I had to be able to substitute regular foods that I could eat and my partner would hopefully not notice the difference. I didn’t want to be slaving away in the kitchen cooking two separate meals everyday. So the challenge began. Cooking Gluten free wasn’t so difficult, the problem was more time consuming, with looking at what ingredients the normal weekly shop had. A simple thing like Soy Sauce was now a no-no. Once I had figured out what items have gluten in them, I had a clear out of our kitchen, to ensure we have a Gluten Free kitchen. I then thought about baking, I felt I was missing out and I didn’t like the supermarket bought bread. SO I started baking, I initially underestimated just how big a challenge baking without Gluten would be, after all Gluten is basically the glue that binds the ingredients together. I started baking cakes, I had a few mishaps along the way. But after a while I felt I had achieved the correct texture, so I moved onto bread. How I longed for a freshly baked French baguette, little did I know how wrong it could go very easily. I had numerous errors trying to tweak recipes to make them work; the food bin would be full of what could only be described as heavy rocks, nothing close to the light, fluffy texture of normal bread. Then finally, I got closer, I knew the next recipe would work. And I was delighted; finally after many failed attempts and constant learning from my mistakes, I had made delicious bread and rolls that all the family and friends enjoyed. So I guess if you are new to this, don’t give up and always learn from your mistakes. We all have to start somewhere. I suppose that statement applies to everyday life too.
