Yak cheese, produced from the milk of yaks or hairy bovines that live at altitudes of 10,000-17,000 ft above mean sea level in the Himalayas, is unique in flavor and texture. In taste, it is pleasant to the Western palate; in texture, it is proximate to the tomme de Savoie or semi-firm French cheese made from cow’s milk. The unique quality of Yak cheese is probably not unrelated to the fact that the female yak, or nak it is known in Nepal, pastures on high-altitude herbs many of which constitute the foundation of Tibetan/Nepalese herbal medicine. This is possibly why, as studies have shown, yak cheese’s omega-3 fatty acids content is thrice that of cheddar cheese. Specifically, yak cheese is rich in alpha-linoleic acid, an omega-3 fatty acid that is found, among others, in flaxseeds and has proven to have positive health benefits in combating diseases, body fat gain, and type-two diabetes. Our facility in Nepal is the first western-style cheese was produced in Nepal in 1951. Earlier, peoples of the Himalayan region produced butter and cheese-like products from nak milk, quite different in taste to the cheeses known in the west. Our factory in Nepal was set up in 1993, working as a mobile dairy alongside naks in their natural Himalayan pastures. Given the dearth of roads, at that time, the pasteurization of milk had to be conducted in large wood-fired boilers, under tents at such heights. Today, however, things have changed: 8 tons of cheese is produced annually from milk supplied from an estimated 600 naks, owned by more than 35 families. The store, where cheese is aged, is located in the picturesque village of Shera, perched at an altitude of 9,000 ft in central Nepal.
