My name is Rachel Rondeau and welcome to Holistic Vermont. I am a native Vermonter, currently residing in Burlington with my husband and our two German Shepherds, Ruca and Tron. We have both lived in many different places over the years, ranging from New Hampshire and Massachusetts to Wyoming and Colorado. While all of these places are beautiful in their own way, Vermont continues to call us back, reminding us how special our culture and community is here in the Green Mountains. My husband Corey and I are both avid hikers/adventurers, nature enthusiasts, dog lovers, and aficionados of fresh, local, and nutrient dense foods. In Vermont, we are very fortunate to have many local farms, CO-OP's, farmers markets and community supported agriculture at our disposal. As a consumer I have found that in buying local foods we not only receive the satisfaction of knowing that our money will support our local community agriculture, but also that our health benefits tremendously. Buying locally grown food ensures your body is receiving the highest quality food that your money can buy. Most produce today, (organic or conventional), is grown in nutrient-depleted soils, is picked before it's peak ripeness, and travels thousands of miles before it reaches your plate — at which point it's so depleted of nutrients your body hardly benefits from it! There are so many more reasons to eat locally grown foods, but we'll save that for another discussion. My own journey to better nutrition and health began after I had been diagnosed with an Autoimmune disease. For years I coped with being sick, exhausted, and unsure of what to eat because everything seemed to affect me the same way. When I asked my doctors what I should be eating, considering this disease I had, I was told "unfortunately, the type of food that you eat does not seem to make a difference." While I trust my doctors in many ways, I did not believe that statement could possibly be true. I began researching food as medicine and slowly started the transition away from processed, conventionally grown foods, to consuming only organic, local, whole, "real" foods. After years of trial and error and lifestyle adjustment I decided to pursue a formal education in holistic nutrition therapy. While I still practice healing myself everyday, it is my hope, that with the knowledge I obtain through my education, personal struggles and experiences, I can help others that may be trying to find the path to better health and nutrition.
