With my Food Safety hat on, here are some tips for a healthy Christmas: Buy your ingredients only from reputable sources... Never wash your meat before cooking it... Cook your Turkey or other main fully to a temperature of 75 to 80c (or equivalent) in an oven which distributes heat evenly... Reheat your leftovers to a minimum of 70 for 2 minutes and reheat only once... Ice crystals form in the carcass of the frozen turkey. Check inside before establishing your Turkey or other main is cooked properly... Grill cocktail sausages or add them in with your Turkey, don't fry :) Wash your hands well between handling items and this doesn't have to be with anti bacterial soap either. Normal soap will do... Finally, when storing keep hot food hot and cold food cold. Keep your food safe this year either in a fridge or cold space in your kitchen... Merry Christmas Friends

A short post on alergies… I don't often post direct on this page, however feel it is worth sharing some thoughts and views on alergies and cleanliness. Some people believe we are too clean these days, and perhaps the use of hand gells and over cleaning in our homes is making us vulnerable to certain common alergies. The truth is we are not getting out and about as much, where the environment is grubby and dirty, and rich in different bacteria types. The lack of exposure to these different bacteria types is affecting our bodies abilities to build up a resistance and say no to all those horrible symptoms that come with alergic reaction. So, the problem is not with us using hand gells for hand hygiene or over cleaning in our homes. In fact, we should not stop this good practice as harmul germs on surfaces and hands can lead to ilness, and in some cases death. Food poisoning bacteria and viruses should always be treated differently to other non pathogenic micro organisms. As a food safety professional, my advice is to keep your personal hygiene good, wash and sanitise your hands frequently and maintain a good standard of cleanliness in your kitchen and homes generally. However, do try to get out more and explore environments that are rich in a variety of different bacteria types to build up stronger immune systems. Here is a link to a programme on same, and if you have a question on food safety and hygiene, fire away. I will be more than happy to offer up to date and practical advice :) http://www.bbc.co.uk/programmes/b04g507y

Rant time - I have little, to no time for people who claim to be qualified assessors, trainers, or organisations that deliver qualifications half-heartedly. The standard I've seen recently in organisations is appalling, yet in my own business, my associates and I get the impression we are quite often seen to be "over assessing" or making unnecessary work for students. This couldn't be further from the truth! The reality is, we are doing it right and the others are doing it wrong. That's a fact. Having recently seen the responses one student made against assessment criteria in an initial teaching qualification for further education, with another training provider, I can only say that I'm not surprised that many people just don't trust private training providers to know what they are supposed to be doing… This is why so many students end up going to colleges because they have little faith in the private sector operators. It pains me to say that I've also recently experienced poor standards from an actual awarding body. Their externally assessed volunteer management qualification can only be described as a joke. Feedback comments from "so-called" qualified external examiners amounted to "criteria met" or "criteria not met". In this day and age that level of detail is shameful from any assessor, never mind one from an actual UK awarding authority. So, there you have it… The little guys are sometimes assumed to be lacking in ability, resources etc to get the job done, yet we are more than capable of punching above our weight. The bigger the organisation, the greater the risk of poor standards due to the harsh reality that many employees don't give a shit. At least when the self-employed guys go to work, we go to work with integrity and a knowing that if we don't do the job right, it can sometimes be as simple as successor failure for our business. HRD Services has been in business since 2008. You know we must be doing something right... Rant over. Start trusting in smaller businesses for delivering the important stuff that really matters in your professional development. At least we care when it all goes wrong...
