Ok Folks Had a few people ask how to trim a brisket. Here's a video how I trim ... Different cuts like Select dont need to be trimmed as much. We use Black Angus /Upper Choice and Prime Brisket so marbling is present through out the meat, so we trim 1/4 fat off the fat cap. The fat is important in the cooking process: you want fat to melt and to keep the meat moist through out the cook time. We smoke 15 - 18 hours @ 275°so we need some fat.If you cook hotter youll need to leave more fat on. If you have question feel free to inbox . Hope this helps! Thanks
