We are a microbatch coffee roasting company. We are moving around Hoboken in a coffee cart serving fresh coffee, espresso, lattes and mochas. As well as the best iced coffee and fresh, organic teas. 99% of all coffee sold is STALE. we are the 1%.

Description

What we do We buy the highest quality Arabic coffee from all four corners of the planet. We buy from the major green coffee importers and in some cases directly from the farms themselves. We are very excited to announce our first direct trading relationship with a small specialty coffee farm in El Salvador that has scored high 80’s and early 90’s in cup of excellence tastings. Once we receive our green coffee we then roast that coffee at our roasting facility in Jersey City Heights using a small vintage drum barrel roaster. We roast our coffee on the light to medium side of the scale. The reason we do this simple; when you roast green coffee to the darker side of the scale no longer can the drinker taste the coffee, instead they taste the roast. Roasting high quality green coffee dark is a little like cooking an $80 porterhouse steak well done. Our master Roaster is a genius at bringing out the subtle taste notes inherent in the wonderful coffees we buy. We have a state of the art coffee cart that we take to festivals and farmers markets to show case our products. Our cart features a vintage level pull 2-group espresso machine that we imported from Italy. It’s a thing of real beauty and pulls espresso shots that have a marvelous and exotic quality; there really is no espresso machine in Jersey quite like it. Along with our espresso bar on the cart we have a pour over drip station allowing our Batista's to create individual cups of coffee to order. We also brew on a commercial scale at our roasting facility in the heights cold brewed coffee. We sell this both out of cups in iced form and in Mason jar bottled form as a concentrate for people to take home and create their own iced coffees. Cold brewed coffee really is a wonderful thing; it reduces the acidity of the coffee and results in an iced coffee unparalleled in sweetness and palatability. Many people suffer from heartburn as a result of drinking iced coffee; this is because of how the beverage was brewed. Brewing with cold water over a 24-hour period reduces the acidity in the coffee that causes this common complaint. As I said cold brewed coffee is a wonderful thing! Why we do what we do. Put quite simply we are mad for coffee! And most importantly mod for FRESH coffee! We are very passionate about getting people to drink fresh coffee, to actually taste their coffee! The general public has been lied to for decades about what really constitutes fresh coffee. Fresh coffee is coffee that lands in your cup within maximum 14 days of the roasting procedure. After 14 days staleness, acidity and thus bitterness are the only things remaining. Most people fill their coffee with milk and sugar to mask the bitterness that comes from drinking coffee that was roasted months ago. Coffee is a sweet drink, its one of the most complex beverages in the world with over 1000 chemical components. When it is served stale and over roasted its marvelous flavors are lost. We at modcup are very passionate about serving it fresh and lightly roasted and allowing those flavors to sing!
