When I get so excited at the delivery of a nutritional and metabolic analysis, I know that Nutritional Therapy is the right career path for me. It's like the final missing piece of a jigsaw. Roll on my graduation later this summer.
I'm on the home straights now to finally qualify as a Nutritional Therapist, 2 years later than expected but life sometimes gets in the way of plans. Only 2 more weekend clinics and 3 essays and it's all systems go. I can't wait, I have so much passion to share about nutrition and health!
I buy the same ingredients each week from the cheapie supermarket but rarely eat the same thing twice. I love to cook and like to tinker with recipes I find on the Internet. One of my usual purchases is aubergine and I always have previously cooked chick peas in the freezer. Tonight's concoction was baked aubergine with a herby, spicy tomato and chickpea sauce. I halved and baked the aubergine in the oven for around half an hour. I made the sauce with onions, garlic, fresh tomatoes, red pepper, added cinnamon, mint, oregano, allspice, bay leaves and a pinch of chilli. I added the cooked aubergine flesh to the sauce, put the sauce into the skins, sprinkled a little parmesan over the top and popped back in the oven for 20 mins. Et voilà, lush, tasty, healthy and cheap too!
