Performed by Native Americans for thousands of years and pass on to the early pilgrims,the Clambake process starts as it always has, early in the morning, harvesting fresh rock weed straight from the ocean and bringing it to the clambake site. A bonfire is then set ablaze with alternating layers of granite stones and wood until the wood turns to ember and the stones are glowing red. The fresh rock weed, still soaked with ocean water, is piled on top of the glowing stones producing a salty steam. Then all the ingredients, lobster, soft shell clams, mussels, portuguese sausage, corn on the cob, red potatoes, and sweet onions, separated in specialized containers, are set on top of the steaming rock weed in a manner that ensures even cooking and optimal flavor. The food is covered with several moist canvas tarps to seal in the heat, steam, and smoke. Two hours later the canvases are removed revealing the feast. This natural method combines steaming, smoking, and pressure cooking. This creates meat and veggies that are succulent, tender and slightly smokey in flavor, not chewy like when boiled. It also combines the flavors of all ingredients as well as the freshness and saltiness of the rock weed and fire into a taste that will never be forgotten and can only be experience by those at a traditional New England clambake.
