Hello all. Special recipe for the lovely marcus at last nights cookery class...... Apricot and cheese sun beams. Take a handful of pre made puff pastry. dust your worktop with flour and gently roll the ball and flatten with your hand to make a round circle base. Take a sprinkle of icing sugar and sprinkle on top. get half a tinned apricot and place it flat side down onto the centre of the pastry. cut some cheese (stronger the better) and make into strips that tuck neatly under the circle apricot making a sun shape. bake in oven for about 8 minutes until brown and then eat once cooled slightly. Kids love the sweet and savoury nature of this dish - plus you can really go wild with the cheese - kids really do like strong cheese if you give it to them young enough. start with dairylea and you will end up with it - try on the strong adventurous stuff lol x

For those at class tonight and anyone stuck for quick tea.... Here is single portion toad in the hole -no frogs required. 100g of flour 100ml milk One egg Salt or pepper One vegetarian or meat sausage. Whisk flour and egg then add milk bit at time until you have smooth pancake batter. Pre cook sausage and cut into bits and out into oiled oven proof dish. Cover sausage in batter and bake for 10mins or until brown in medium oven. Great with brown sauce and some vegetables xx

Local pub has idea for World Cup food.... Deep fried chicken wings, burgers and fries. Why not look at something little healthier? Pineapple marinated in sugar and cinnamon and then grilled with some pork or plain chicken? Why not chop it up and put in a tortilla easy for smaller children or put in a kebab stick??x

BBQ watermelon........When sorting out the good for my den making birthday party, I came across this idea. Salt the melon and stand for 15mins then rinse salt off (this keeps moisture inside the melon and not dripping in the grill. Brush with olive oil and grill on BBQ until lightly cooked. Perfect for little party goers to help cook themselves and far better than a stodgy shop bought cake xxx
