Two Brothers and restaurateurs, Andy Walker and Chef David Scott Walker, had a vision to bring a new concept to their favorite place in the world, their hometown Memphis, TN. Third generation Memphis boys, with 40 years of combined restaurant and bar experience, Andy and David decided on the location of the former Paulette's. It had the spirit they had envisioned for their Bavarian Beer Hall with Southern charm. With the support of their parents their dream became a reality. They are so excited to invite you to celebrate with them and honor the things they love most, Memphis, family, great food and good beer. "Our focus is to bring guests together through sharing tables, telling tall tales over a liter of lager and enjoying a grilled wurst or a hot pretzel. We aim to provide an atmosphere that feels like Germany in Midtown Memphis.” Together with long time friend and fellow Memphian, David Todd (Executive Chef), Schweinehaus is set to mix up the traditional German cuisine with some local Memphis soul. David, DT, or Donut Taco, however you may know him, has refined his skills working along side Chefs like Wally Joe and Andrew Adams (Acre), and has watched every show Super Chef Bobby Flay has ever made. Captain Taco has worked in the Memphis restaurant scene for over 20 long, so hard, years. David Walker, or Spanky, spent many years in all aspects of zee restaurant. He has been classically French trained at The French Culinary Institute under the watchful eyes of Jacques Pepin, Alaine Sailhac, and fellow Alumni Super Chef Bobby Flay. Before Graduation was hired as Executive Chef of a popular West Village Gastropub called West 3rd Common with friend and mentor Dan Warren. Spanky fell in love with the beer halls of Brooklyn and Queens and moved back to Memphis to bring this love to all of you. Andy Walker, AKA Candy Man, has spent decades in the bar business including years on world famous Beale street. When visiting NYC, Andy also grew a passion for the German beer hall concept and shares a great vision of good times for Memphis. Andy also is a big fan of NYC restaurant Mesa Grill owned by, you guessed it, Super Chef Bobby Flay.
