So here's how we make the rib of beef. Slice 3 large white onions Melt 100g of unsalted butter in a pot and add your sliced onions Add a splash of olive oil And now stir occasionally over a high heat until onions have a golden brown colour Now add a glass of red wine, small handful of brown sugar, and just cover onions with water. Let boil until almost all the water has evaporated. Now blitz the onions to a purée, and grate 1/2 a chilli, small piece of ginger and 1/2 clove of garlic. Blitz for another 2 minutes then leave to one side. Season your beef rib with salt and pepper. Now get a large piece of tin foil and place half of your onion purée on the shiny side of the foil and put your beef on top of the purée. Fold the foil round the beef rib so the purée stays inside the foil and cook for 7/8 hrs in oven at 110c
