Description

We specialise in wild yeast breads, or sourdoughs, that are made over a period of days, using traditional slow fermentation techniques. This is the best way to make bread. Sourdoughs are naturally leavened and keep for much longer than conventional loaves made with added brewer’s yeast.They are delicious fresh or toasted and are made without added enzymes, enhancers, or improvers. Although much of our flour is organic, some of it is shipped in especially from France and Italy, so our range is truly authoritative. A short introduction to the owner, William Black: “Having spent a few years as a writer travelling around Europe and thinking what to do next I became a little obsessive about producing bread for the market. First the village market, here in Appleton where I live. It grew and grew. Then Oxford Farmers’ Market (see homepage for where we sell our bread), and then a weekly spot at Wolvercote in North Oxford . I love to create bread that has a real rustic charm, and that really tastes as bread should : slightly tangy, full of holes and with a thick crunchy crust. Years of travelling around eating in weird places has helped us develop a pretty wide range of breads. A few days in Madeira introduced me to their sublime bola de caco, which is the root of ur very popular sweet potato bread. We now have our own bakery in rural South Oxfordshire, and supply a growing number of pubs, a few Oxford Colleges, and a number of retail outlets” William Black, Owner of The Natural Bread Company
