Spring has sprung and with it..parsnips? Our Midwest winters do interesting things to vegetables and fruit: the cold increases natural sugar content. These spring dug parsnips were left in the ground over winter to enhance their sweetness, and they make a great soup. Were serving it with another cool ingredient: cold pressed acorn oil from one of chef's friends in Wisconsin.
