#Cooking can be fun...Lemon cilantro chicken prep is easy and quick. Take one whole fryer chicken (at room temperature) and split chicken in half with cooking scissors so it will lie flat. Lay the chicken, breast side up, in a roasting pan or large oven-safe baking dish. In a food processor puree zest and juice of 1 lime; 1/2 bunch cilantro; 3 green onions; roughly chopped; 6 cloves garlic (peeled); sea salt; and 1/4 cup coconut oil. Smear the mixture all over the top of the chicken. When the chicken is at room temperature preheat the oven to 400F. Grease the bottom of a cast iron pan with coconut oil so that it won't stick to the chicken. Place the chicken in the oven and put the cast iron pan on top. Bake until the temperature in the thigh of the chicken is around 150-165F, about 45 minutes. Carefully remove the cast iron pan from the top of the chicken, and if you’d like the skin crispier, just stick the oven on broil and peak at the chicken every minute until it’s done to your liking.
