We are packed full of sexy charcuterie in the Old World Style. We seek out the finest aged, air-dried prosciutto, wood-smoked meats and dry-cured hams. Our house specialty items are steeped in the tradition of craftsmanship that takes time and love. In charcuterie the swine is king. We start by buying the best swine Indiana has to offer. That means no junk, just the good stuff. That is the easy part. It starts with delicate blend of spices, all natural meats and an obsession for quality. The craft of salting, smoking and curing takes patience and more of the “L” word.  If you call yourself a "food lover’s market," you had better have some stellar cheeses to back up that claim. We love our stank and because of that we don’t want the other kids to laugh. We have created a special program that we call “A Dozen Cheeses Before you Die.” This is a twelve step program that will allow you to always make a good decision. We have twelve cheeses that we think you should try before you die. And if that doesn’t happen before you finish all twelve steps, we may just change a few to keep life interesting. Fresh chevre, big blue veins, aged raw milk, bloomy rinds, farm fresh, artisanal, local or from far a way France. Which will make the cut this month?

The Flat 12 Bierwerks brewery consists of a 20 barrel DME brewhouse and a floor of fermenters and brites, accompanied by two 120 barrel fermenters outside the building. On this equipment, the brewers will produce a line-up of five house beers, four seasonals and some ‘select’ beers for special promotion and/or monthly exclusives. Kegging equipment and a Maheen bottling line helps get the beer to its final destination. In addition, the brewers have a small pilot brewing system and growing barrel-aging program to satisfy their curiosity, cravings and creative urges. Attached to the brewhouse is a taproom for welcoming customers to sample and take home fresh-as-it-gets product.

With six successful locations, Scotty's Brewhouse has embarked on a new venture: brewing beer.  The Scotty's concept has grown throughout the state of Indiana since 1996, when Scotty Wise opened the first location in Muncie, IN.  What started off as a college town restaurant with locations near Ball State, Purdue and Indiana University soon successfully penetrated the Indianapolis market. "We made our niche offering 30 different draught beers, one of very few that did that," says Wise. From day one, Scotty has had a passion for beer and a goal of, someday, brewing his own but, thanks to youth, naiveté, stupidity and a lack of cash, his dream took a back seat and he, instead, focused on offering a wide selection of beer in hopes to one day be able to brew his own. With the six successful restaurant locations up and humming and the perfect location coming available in Broad Ripple, Scotty felt that day had finally come. He wasn't looking for a new venture.  The world was at the tail end of one of the worst recessions we have ever seen or experienced.  But, like most successful entrepreneurs, this is when the most aggressive business people "buy low and sell high."  A location fell into his lap that was perfect from all angles: parking availability, lease rates, square footage and even a single truck loading dock. The light bulb went off.  "We can brew beer here, not only to serve a new concept and market with pizza and beer; it can also serve as a production facility on a larger scale, giving us the ability to ship our own beer to all 6 other locations, exclusively." The name, Thr3e Wise Men, comes from Scotty himself and follows the personalization he has given his other restaurants.  Scotty wanted to incorporate his strong sense of family and heritage and decided to name the brewery, Thr3e Wise Men, representing the legacy of Scotty and his two sons, Slater and Lincoln. The brewpub greets its guests with a classic lodge feel - exposed beams, concrete floors and warm wood walls.  Of course, Scotty prides himself on staying ahead of the technology curve and wanted to be the first one of the first Indiana restaurants to adorn dining room tables with Apple iPads so customers are able to learn more about Thr3e Wise Men Brewing Co., the beers, and Scotty's two other restaurant concepts. The brewpub's menu goes beyond burgers and fries, the fare Wise's other restaurants have become well-known for. At the brewpub, Scotty chose the perfect complement to beer, pizza. Guests choose their own toppings in order to ensure they get exactly what they want in a meal. Some traditional Brewhouse favorites, such as Dill Chips and award-winning Brewhouse Buffalo Wings, are included on the menu, as well. Guests munch on fresh-popped, Indiana grown popcorn while waiting for their dinner.  And, to keep with tradition of ending the meal with a special, memorable treat, at the end of their dinner, guests are given boxes of Boston Baked Beans.  (Scotty's Brewhouse bids guests a fond farewell with boxes of Red Hots, a tribute to Scotty's grandmother, while Scotty's Lakehouse happily doles out boxes of Lemonheads.) All Thr3e Wise Men Brewing Co.'s draft beers are available to tempt guests' taste buds at the brewpub and also for carryout in 64oz glass growlers and 1/6 barrel kegs.  And, because of Scotty's affinity and passion for good beer, Thr3e Wise Men Brewing Co. also offers various craft bottled beers for carryout in an effort to encourage and support smaller and independent breweries.
